Polugar No. 4 recreates one of the classic infused vodkas of the Russian nobility — honey and allspice, a pairing that shows up in 18th-century recipes for the "highborn" bread wines served in aristocratic households. It starts from the same foundation as every Polugar: bread wine, the pot-distilled grain spirit that was Russian vodka before Tsar Alexander III ordered every pot still in the country destroyed in 1895 and gave distillation to government column stills. Vodka historian Boris Rodionov rediscovered the original recipes in documents held at the Russian National Museum, and because Russian law still forbids the method, he built Rodionov & Sons in a forest in Poland, reconstructing copper pot stills from 18th-century drawings. No. 4 begins with a rye-and-wheat bread wine, triple distilled, with honey and allspice added before the final distillation so the flavors integrate into the spirit rather than sweetening it from the outside. It's clarified with egg whites, filtered through birch charcoal, and bottled at 38.5% ABV. Expect warm honeycomb, allspice, clove, and fresh bread on the nose, opening into an oily, rounded palate where the honey reads as aroma and warmth rather than sugar, with baking spice, a touch of black pepper, and the rye-wheat base underneath, finishing long and gently spiced.
